  • 1/4 cup plain flour
  • 1/2 cup thickened cream, whipped (to serve)
  • 125grams butter, at room temperature
  • 2tablespoons icing sugar (to dust)
  • 1teaspoons vanilla extract
  • 1 lemon, rind finely grated
  • 1 lemon, juiced
  • 4 small plums, halved, stone removed, cut into wedges (or apricots)
  • 1 cup almond meal
  • 2 eggs
  • 1/2 cup caster sugar

Method

Step 1 of 4

Preheat oven to 180°C.

Step 2 of 4

Grease and line the base of 6 holes of a medium muffin pan.

Step 3 of 4

Put butter, caster sugar, vanilla, eggs, lemon rind and juice into a food processor and process until well combined. Add almond meal and flour. Process until just combined.

Step 4 of 4

Spoon mixture into prepared muffin pan. Top with wedges of fruit. Bake for 20-25 minutes or until cooked through when tested with a skewer. Stand for 5 minutes. Transfer to a wire rack to cool. Dust with icing sugar. Serve with thick cream.
