5 Ingredients

  • 1 cinnamon stick
  • 1kilograms ripe bananas, sliced
  • 2teaspoons vanilla bean paste
  • 1/4 cup lemon juice
  • 2 cup brown sugar

Method

Step 1 of 3

Combine sugar, 1/3 cup water, vanilla, cinnamon and lemon juice in a large saucepan. Stir over medium heat until sugar dissolves.

Step 2 of 3

Increase heat to medium-high and bring to the boil. Add banana and boil gently for 20-25 minutes, stirring regularly to break up the banana, or until mixture is thick.

Step 3 of 3

Spoon into 3 x 300ml sterilised jars. Seal with lids while hot, then cool to room temperature. Serve on scones, pikelets or pancakes with cream or on thick toasted sourdough with salted butter. Refrigerate for up to 2 weeks.
