- 125grams butter, softened
- 3/4 cup brown sugar
- 1 egg
- 1teaspoons vanilla essence
- 1 3/4 cup self raising flour
- 150grams chocolate chips
- 100grams pistachios, roughly chopped
- 1 tub vanilla ice cream
- 1 punnet strawberries
Description
The ultimate indulgence of cookies and ice cream. Perfect for date night, Valentines Day or any night to impress your most loved ones.
Instruction tip
Use any nuts chopped up for the crumb or different flavours of ice cream. Use store bought choc chip cookies for a cheat's version.
Method
Step 1 of 4
Make the choc chip biscuits - cream the butter and sugar until pale, add the egg and vanilla essence to beat together, stir the flour and choc chips to combine. Roll spoonfuls into balls and bake on 170C for 12 minutes in total, turning the trays after 8 for even cooking. I made 30 biscuits in total.
Step 2 of 4
Allow the biscuits to cool while you roughly chop the pistachios. Alternatively you can make the biscuits the day before as I did.
Step 3 of 4
Try to find biscuits roughly the same size then sandwich together with as much or as little ice cream you like. Then roll in the pistachios.
Step 4 of 4
Serve immediately or you can also wrap in cling film to freeze for a few hours if making them for a dinner party, just wrap each individually.
