  • 250grams wheatmeal biscuits
  • 250grams unsalted butter, melted
  • 350grams fresh mango, finely sliced
  • 6 limes
  • 2 cup flaked coconut
  • 8 egg yolks
  • 790grams sweetened condensed milk (2 cans)

Method

Step 1 of 2

Preheat oven to 180°C. Break biscuits. Place in a food processor with coconut, and pulse until fine crumbs. Add butter and pulse to combine. Press evenly over base and side of a 24cm loose-based tart pan (4cm deep). Bake for 15 minutes or until golden brown. Set aside to cool.

Step 2 of 2

Finely grate rind of 3 limes then juice all 6 to make 200ml. Whisk milk, lime rind and juice and egg yolks together. Pour into crust, smooth surface and bake for 15 minutes or until just set. Cool, then chill until cold. Top with mango slices.
