- 2teaspoons vanilla extract
- 1tablespoons honey
- 1/3 cup almond meal
- 375grams Ricotta
- 1 free range egg
- 2tablespoons caster sugar
- 4 Croc Egg plums, sliced
- 1 sheet shortcrust pastry

Method
Step 1 of 5
Preheat oven to 180°C. Place a greased, 21cm fluted tart tin with removable base on an oven tray.
Step 2 of 5
To make ricotta filling, in a bowl combine ricotta, caster sugar, egg, almond meal and vanilla.
Step 3 of 5
Place pastry sheet over tart tin and gently press into side and base of tin. Trim any excess pastry. Spoon ricotta filling into tart shell and smooth the top with a spatula.
Step 4 of 5
Bake for 20-25 minutes or until pastry is golden and filling is set. Remove from oven.
Step 5 of 5
To serve, top galette with sliced plums and drizzle with honey.
