Pineapple and Blueberries Nut Crumble

- 1/4 cup plain flour
- vanilla ice cream (to serve, optional)
- 60grams unsalted butter, melted
- 1teaspoons vanilla extract
- 125grams blueberries
- 1/2teaspoons ground cinnamon
- 1/2teaspoons ground nutmeg
- 60grams pecans, chopped
- 1 fresh pineapple, peeled, cut into 8 x 2cm-thick slices
- 3/4 cup brown sugar
- 60grams slivered almonds
- 1tablespoons rum (optional)
Method
Step 1 of 3
Preheat oven to 180°C. Line a baking tray with baking paper. Combine 1/4 cup of the sugar, flour, nuts, spices and butter in a bowl.
Step 2 of 3
Heat a non-stick frying pan over medium-high heat. Add remaining sugar, rum (if using) and vanilla and stir until sugar has dissolved. Add blueberries and pineapple slices and cook for 2-3 minutes each side until golden. Transfer to baking tray.
Step 3 of 3
Pile nut mixture on top of fruit. Bake for 25 minutes. Serve with vanilla ice-cream.
