- 40grams butter, chopped
- 1teaspoons vanilla extract
- 1 pinch ground cinnamon
- 2 nectarines
- 1/2 cup caster sugar
- 4 slice fruit and nut bread
- 1 cup mascarpone

Method
Step 1 of 3
Halve nectarines and remove stones. Cut into wedges. Combine mascarpone with vanilla in a bowl and set aside.
Step 2 of 3
Heat a small non-stick frying pan over medium heat. Sprinkle sugar evenly into pan and shake over heat until sugar melts and turns golden. Add butter and cinnamon, swirling to combine. Add nectarine wedges. Simmer, uncovered for 3-5 minutes until they are just soft.
Step 3 of 3
Toast bread, halve diagonally and place onto serving plates. Top with a dollop of mascarpone, nectarines and caramel sauce. Serve. Note: Vanilla extract is different to vanilla essence.
