- 2 cm piece fresh ginger, sliced
- 4 small yellow nectarines
- 4 small white nectarines
- 4 scoop vanilla ice cream (to serve)
- 1 1/2 cup caster sugar
- 1/4 cup lime juice

Method
Step 1 of 3
Place sugar, 1 cup water, lime juice, ginger and coconut essence into a large saucepan over medium heat. Stir until sugar dissolves and mixture comes to the boil. Reduce heat to low and simmer for 3 minutes.
Step 2 of 3
Add nectarines to syrup and cook, covered, for 5 minutes. Gently turn nectarines and cook, covered, for a further 5 minutes or until tender.
Step 3 of 3
Transfer nectarines and syrup to a large bowl. Cool. Cover and refrigerate until cold. Serve nectarines and syrup with a scoop of vanilla ice cream.
