  • 1tablespoons rum (optional)
  • 1 cinnamon stick
  • 20 fresh lychees
  • 1 paw paw
  • 1 lime juiced
  • 1 lime zested
  • 1/4 cup honey
  • 1 cup thick natural yoghurt (to serve)

Method

Step 1 of 4

Place honey, 2 tablespoons of water and the cinnamon stick into a small saucepan. Bring to the boil and simmer for 5 minutes until thickened slightly. Cool for 5 minutes then discard cinnamon stick. Stir in the rum and lime juice.

Step 2 of 4

Meanwhile, slit the skin of the lychees with a knife or using your fingernail and peel. Cut in half and remove the seed.

Step 3 of 4

Halve the paw paw and scoop out the seeds. Peel and cut into cubes.

Step 4 of 4

Spoon fruit into bowls and spoon over syrup. Serving suggestion: Top with a dollop of yoghurt and finish with lime zest.
