  • 1 cinnamon stick
  • 8 passionfruit
  • 6 peaches
  • 2/3 cup thick yoghurt (to serve)
  • 1 cup caster sugar

Method

Step 1 of 6

Place 2 cups water, sugar and cinnamon in a large heavy-based saucepan. Split vanilla bean and scrape out seeds using the point of a small knife. Add bean and seeds to saucepan. Stir over low heat until sugar dissolves.

Step 2 of 6

Increase heat to high and bring to the boil. Reduce heat to medium-low and simmer, uncovered, for 10 minutes or until mixture becomes syrupy. Add peaches, cover and simmer for 10 minutes or until peaches are tender.

Step 3 of 6

Using a slotted spoon, lift peaches out of the syrup and transfer to a bowl. Set aside until cool enough to handle.

Peel off skin and discard. Cut peaches in half and remove stones.

Step 5 of 6

While peaches are cooling, bring syrup back to the boil and boil, without stirring, until you have a golden caramel syrup. Remove from heat and carefully add passionfruit pulp. Be careful as toffee will bubble and spit. Stir until passionfruit is well combined. Set aside.

Step 6 of 6

Place peach halves into serving bowls and pour over some passionfruit syrup over each. Serve with yoghurt.
