- 1 cup chocolate cookie crumbs (arnotts choc ripple)
- 1/2 cup almond meal
- 60grams unsalted butter, melted (plus extra for greasing)
- 165grams white marshmallows
- 160milliliter full cream milk
- 1teaspoons peppermint essence
- 1/4teaspoons green food colouring
- 1 cup full cream thickened cream
- 1/2 cup pistachios
- 1/2 cup chocolate, grated (mint kit kat tastes great)
Description
Naughty but nice, this Christmas dessert tantalises the taste buds and adds festive cheer. A family favourite from decades ago!
Method
Step 1 of 6
Grease 22cm pie dish with melted butter.
Step 2 of 6
To make pie base: In a large bowl, combine biscuit crumbs, almond meal and melted butter. Press into greased dish creating a smooth surface. Freeze for at least 30 mins to firm.
Step 3 of 6
To make filling: Combine marshmallows and milk in a heatproof bowl set over a small saucepan of gently simmering water and stir until melted. Remove from heat and add peppermint essence and green food colouring. Allow to cool slightly.

In a separate bowl, whip cream until firm peaks. Gently fold cream into marshmallow mixture until well combined. (Carefully add more green food colouring at this point, if preferred).
Step 5 of 6
Spoon mixture onto the pie crust and re-freeze to firm the marshmallow and cream filling. Freeze overnight (min 8 hours) for optimum results.
Step 6 of 6
Remove from freezer half hour before serving. Decorate with chopped pistachios and grated chocolate.
