- 1 1/4 cup plain flour
- 200milliliter double thick cream (or ice-cream to serve)
- 2tablespoons milk (to brush)
- 150grams butter, chopped
- 3/4 cup sour cream
- 2 nashi, quartered and cored
- 1teaspoons ground cinnamon
- 1 egg, lightly beaten
- 2tablespoons brown sugar
- 1/2 cup caster sugar (plus 2 tsp caster sugar to sprinkle)
- 1/2 cup walnuts
- 1/3 cup sultanas

Method
Step 1 of 5
Place walnuts, sugar and cinnamon in a food processor and mix until walnuts are finely chopped. Add flour and process to combine. Add butter and process until mixture resembles fine breadcrumbs. With the processor running, add egg and process until mixture comes together into a ball. Remove dough, wrap in plastic and refrigerate for 30 minutes.

Slice nashi quarters and combine in a bowl with sour cream, brown sugar and sultanas.

Preheat oven to 180°C. Line a baking tray with non-stick baking paper.
Step 4 of 5
Place dough on a lightly floured surface and roll cut into a 30cm diameter circle. Transfer to baking tray.
Step 5 of 5
Pile nashi mixture into the centre of the pastry leaving a 5cm border. Fold in pastry edges then brush pastry with milk and sprinkle with extra sugar. Bake for 40 minutes or until golden. Serve with cream.
