  • 200grams cold butter, diced
  • 4 large plums, 1 sliced to serve
  • 1/4teaspoons ground cinnamon
  • 1/3 cup caster sugar
  • 2/3 cup almond meal

Method

Step 1 of 4

Process flour, 1/3 cup almond meal, 1/4 cup of the sugar and the cinnamon together in a food processor until combined. Add 170g of the butter and process until mixture resembles breadcrumbs. Add 1 tbs of cold water, then pulse, adding a little more if necessary to bring together. Flatten to a disc and wrap in plastic. Chill for 20 minutes or until firm.

Step 2 of 4

Preheat oven to 190°C. Lightly grease a 6-hole large muffin tray. Halve plums and remove stones.

Step 3 of 4

Cut dough into 6 equal pieces. Roll out each to 4mm thick and approximately 12cm diameter. Place plums cut-side down on the bench. Lay a round of pastry over each and press well around the sides to cover. Turn over using a palette knife and place into a muffin hole.

Step 4 of 4

Rub remaining almond meal, sugar and butter together until crumbly. Sprinkle over pies. Bake for 25-30 minutes or until golden. Cool in tin for 10 minutes, then carefully lift out onto plates. Serve with extra plum slices and thickened cream.
