- 3/4 cup port
- 500grams cherries, pitted, halved
- 1 small brown onion, finely chopped
- 1teaspoons garam masala
- 1/2teaspoons ground nutmeg
- 1tablespoons olive oil
- 2tablespoons sage, finely chopped
- 500grams jam setting sugar

Method
Step 1 of 2
Heat oil in a medium saucepan over medium heat. When hot, add onion and cook for 4 minutes or until soft. Stir in garam masala and nutmeg. Cook for 1 minute. Add cherries, sugar, port and sage. Stir until sugar dissolves and mixture comes to the boil. Simmer for 10 minutes or until mixture thickens. Remove from heat and allow to cool.
Step 2 of 2
Pour compote into a large sterilised jar and seal. Refrigerate for up to 2 months. Serve with turkey, ham, chicken or lamb.
