- 1 large red onion, finely chopped
- 1/3 cup parsley leaves, roughly chopped
- 2tablespoons olive oil
- 2 eggs, whisked
- 1/4 cup sage leaves, roughly chopped
- 200grams mild pancetta, thinly sliced, chopped
- 100grams diced walnuts
- 7 cup gluten free breadcrumbs
- 300grams frozen pitted cherries, thawed, chopped

Method
Step 1 of 4
Preheat to 180°C. Grease a 20x10cm loaf pan and line with baking paper.
Step 2 of 4
Heat oil and butter in a frying pan over medium heat. Cook onion and pancetta for 10 minutes or until soft. Cool.
Step 3 of 4
Place breadcrumbs in a bowl with the onion mixture and remaining ingredients. Season.
Step 4 of 4
Spoon into pan, pressing evenly. Bake for 25 minutes or until cooked through and firm to the touch. Stand for 10 minutes. Turn out and slice.
