  • 1 granny smith apple, cored, cut into 1cm pieces
  • 4 cm piece ginger, peeled, sliced
  • 1 onion, roughly chopped
  • 800grams cans cherry tomatoes
  • 2/3 cup apple cider vinegar
  • 8 medjool dates, pitted, roughly chopped
  • 4 cloves garlic, chopped

Method

Step 1 of 1

Process onion, date, ginger and garlic in a food processor until finely chopped. Transfer to a saucepan. Add tomatoes with juice, apple and vinegar. Lightly crush tomatoes with a fork. Bring to a simmer over medium heat, reduce heat to medium-low, and cook, stirring occasionally, for 45 minutes or until reduced and thickened. Pour into hot sterilised jars and seal. Store in the fridge for up to 1 month.
