- 1 small French shallot, finely chopped
- 1/3 cup verjuice
- 1 bunch chives, chopped

Method
Step 1 of 2
Combine verjuice and 1 tbs water in a small saucepan. Heat until just warm. Add shallot to pan with butter. Swirl pan to melt butter. Season to taste with salt and white pepper.
Step 2 of 2
Arrange oysters in the half shell on a platter on a bed of crushed ice or coarse rock salt. Spoon 1 tsp of dressing onto each oyster and top with chopped chives. Serve while the dressing is warm.
