- 1 small baguette
- 1tablespoons olive oil
- 2 cloves garlic, peeled
- 2 zucchinis
- 1 pinch saffron threads
- 1tablespoons lemon juice
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 1 lemon, grated zest (to garnish)
- 1 handful basil leaves (to garnish)
Description
These gorgeous little bruschettas have a herbaceous flavour. Adding lemon juice and zest brings out the tastes of summer.
Method
Step 1 of 4
Preheat griddle or grill. Slice the baguette thinly on an angle, drizzle with olive oil, and grill until crisp on both sides.

Use 1 garlic clove to rub gently over the crisp bread.
Step 3 of 4
Dice the zucchinis and chop the other garlic clove finely. Heat a little oil in a pan and sauteé zucchini and garlic for 5 minutes.
Step 4 of 4
Add a pinch of saffron and cook until vegetables start to turn golden. Add 1 tbsp lemon juice or more to taste, the season and use to top crisp bruschetta. Garnish with lemon zest and basil or mint leaves scattered over.
