Description

Hugely popular, röstis pop up everywhere nowadays. Try them with other toppings, but they are delicious served with creamed horseradish and smokedfish.

Method

Step 1 of 9

Using a potato or vegetable peeler, peel the potatoes, then wash them in cold water and dry them thoroughly in kitchen paper.

Step 2 of 9

Using a box grater, coarsely grate the potatoes onto a large plate. Don’t use a food processor, as they will become too wet. Use them immediately.

Step 3 of 9

Place the potato in the centre of a clean tea towel. Bring the corners of the towel together and squeeze over the sink to remove as much moisture as possible.

Place the potato in a large mixing bowl, add the flour and seasoning, and mix well together with a wooden spoon.

Heat a frying pan with 1 tbs sunflower oil. Place a cookie cutter in the pan and fill with 1 tsp of the potato mixture. Remove the ring.

Fry 1 rösti at first for about 2-3 minutes on each side, then taste to make sure you have the correct seasoning, adding more salt and pepper if required.

Using the cutter, shape and fry a further 9 röstis for 2-3 minutes on each side, pressing them down with the back of a teaspoon as they cook.

Once the röstis are crisp and golden, cool on kitchen paper. Repeat, using the remaining oil and mixture, to cook a further 10 röstis.

At this stage you can store the röstis, ready to use. Or top with your favorite ingredients, serve, and enjoy!
