  • 100grams artichokes, store bought jar and drained
  • 20grams spinach, washed and drained
  • 8 small cherry tomatoes, halved
  • 60grams blue cheese, sliced
  • 4 small puff pastry, store bought roll into 4 small squares
  • 1 medium egg, cracked and beaten
  • 2 medium radishes, sliced
  • 160grams rocket
  • 2tablespoons olive oil
  • 1 pinch salt
  • 1 pinch pepper

Description

The blue cheese adds a rich saltiness to these indulgent tartlets.

Method

Step 1 of 5

Pre-heat the oven to 160°C. Brush the pastry sheets with the beaten egg and bake in the oven for 10 minutes.

Step 2 of 5

Heat up a pan to a medium heat and fry the artichokes and tomatoes for 5 minutes.

Step 3 of 5

Add the spinach to the pan and fry for a further 1 minute and then remove the pan from the heat.

Step 4 of 5

Remove the baking tray with the pastry sheets from the oven and place the cooked veg on each of the sheets.

Step 5 of 5

Place the blue cheese on top of the veg and drizzle the olive oil on top. Bake for 10 minutes. Remove from the oven and add salt and pepper to garnish.
