  • 260grams chargrilled capsicum in oil
  • 1 cup beetroot leaves, rinsed
  • 1teaspoons red chilli flakes
  • 1/2 cup finely grated parmesan
  • 1/2 cup sundried tomatoes in oil
  • 3teaspoons extra virgin olive oil
  • 1/4 cup oregano leaves
  • 1 clove garlic

Method

Step 1 of 1

In a food processor combine capsicum in its oil with tomatoes, beetroot leaves, parmesan, oregano, chilli and garlic. Process to a smooth paste. Season to taste. Transfer to a jar and cover in a thin layer of oil. Seal jar and refrigerate until ready to use.
