Method

Step 1 of 3

Heat oil in a deep saucepan over medium heat. Add onion and cook for 10 minutes, stirring occasionally, until soft.

Step 2 of 3

Meanwhile, halve capsicums and remove seeds. Cut into strips. Add to pan with garlic. Cover and cook gently for 15 minutes, stirring occasionally, until soft.

Step 3 of 3

Add tomato and vinegar. Cook, uncovered, over low heat for 30 minutes. Season with salt and pepper. Transfer peperonata into a serving bowl. Top with chopped basil. Serve.
