Method

Step 1 of 4

Combine the sugar, dill, lemon juice, salt, and pepper in a small bowl and mix all the ingredients together well.

Step 2 of 4

Lay one fillet of salmon, skin side down, on a clean tray. Spread all the curing mix evenly over the whole fillet.

Step 3 of 4

Place the other fillet on top, flesh side down. Wrap the fillets tightly in cling film and weigh them down with a plate and 1-2 cans. Refrigerate for 48 hours to cure.

Step 4 of 4

Turn the fish every 12 hours to compress each fillet and drain off the fluid so the fillets firm up. Remove, unwrap, and pat dry with kitchen paper.
