  • 3teaspoons sesame oil
  • 850grams skinless salmon fillets, coarsely chopped
  • 1teaspoons fish sauce
  • 2tablespoons coriander leaves, finely chopped (plus extra leaves for garnish)
  • 1teaspoons ground ginger
  • 3 lime, cut in half (to serve)
  • 3teaspoons lemongrass, finely chopped
  • 1tablespoons vegetable oil
  • 1 long red chilli, deseeded (finely chopped)

Method

Step 1 of 4

Place salmon, lemongrass, ginger, sauce, 1 tsp sesame oil and 1 tsp salt in a food processor. Pulse until finely chopped, but not a paste. Transfer to a bowl, add chilli and chopped coriander, and mix to combine.

Step 2 of 4

Using about 2 1/2 tbs of mixture, form onto a skewer, pressing firmly with your hand. Place on a baking paper-lined tray. Repeat to make 15 more skewers. Freeze for 10 minutes until firm then brush with remaining sesame oil.

Step 3 of 4

Heat 2 tsp vegetable oil in a large non-stick frying pan over medium-high heat. Add half the skewers and cook for 5 minutes, turning carefully with a spatula, or until golden and cooked through. Repeat with remaining oil and skewers.

Step 4 of 4

Serve salmon skewers scattered with coriander leaves and lime.
