- 4 hoki fillets
- 4 red rascal potatoes, thinly sliced
- 2 tomatoes, seeded, finely diced
- 1 green capsicum, seeded, finely diced
- 2teaspoons piri piri seasoning
- 5milliliter virgin olive oil spray
- 1 lemon, cut into wedges (to serve)
- 1tablespoons olive oil
- 1 bunch dill
- 1tablespoons lemon juice
- 120grams salad leaf mix (to serve)

Method
Step 1 of 8
Preheat oven to 200°C.
Step 2 of 8
Line a large baking tray with baking paper.
Step 3 of 8
Combine olive oil, potato slices and dill in a large bowl. Place onto prepared tray, overlapping slightly to make 4x14cm squares. Bake for 20-25 minutes or until light golden.

Combine capsicum, tomato, piri piri seasoning and lemon juice in a bowl.
Step 5 of 8
Place a fish fillet onto each square of potato.
Step 6 of 8
Spray with olive oil and top with capsicum mixture.
Step 7 of 8
Bake for 20-25 minutes or until fish is cooked through.
Step 8 of 8
Serve with green salad and lemon wedges.
