Method

Step 1 of 4

Preheat oven to 200°C.

Step 2 of 4

Place the mushrooms in a baking dish. Spray with a little oil spray and season with freshly ground black pepper. Bake for 15 minutes lightly browned.

Step 3 of 4

Toast the bread and place on serving plates.

Step 4 of 4

Spread with avocado. Top with mushrooms, tomato slices, spinach leaves and ricotta. Season with freshly ground pepper.
