  • 1 handful fresh flat-leaf parsley, finely chopped
  • 4 spring onions, finely chopped
  • 2-3tablespoons walnut oil
  • 1tablespoons cider vinegar
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 4-5 slices of Parma ham, chopped
  • 1 handful wild rocket leaves

Method

Step 1 of 2

Put the lentils, artichokes, capsicums, herbs, and spring onions in a large bowl. Drizzle over the oil and vinegar, season with salt and black pepper, and stir well to combine.

Add the Parma ham and rocket, and toss gently. Transfer to a serving dish, and serve with a green salad.
