- 1 clove garlic, crushed
- 20grams butter
- 300grams cauliflower florets
- 1tablespoons coriander leaves, chopped
- 1/2 cup chicken stock
- 1 pinch freshly ground black pepper (to season)
- 1teaspoons cumin seeds
- 2tablespoons natural yoghurt
- 3tablespoons brown sugar
- 500grams carrots

Method
Step 1 of 6
Peel carrots and slice into 5mm thick sticks.
Step 2 of 6
Divide cauliflower into small florets.
Step 3 of 6
Heat butter in a frying pan. Add garlic and cumin seeds and cook for 2 minutes until aromatic. Add carrots and cauliflower and toss in pan to coat with cumin. Add stock and sugar and stir until sugar has dissolved.
Step 4 of 6
Cover and cook for about 6 minutes until tender.
Step 5 of 6
Transfer to a serving bowl, top with yoghurt and sprinkle over coriander. Season with freshly ground black pepper.
Step 6 of 6
Serve with grilled fish or chicken.
