  • 45grams parmesan, grated
  • 1 seeded red chilli
  • 1tablespoons lemon juice (to taste)
  • 10 basil leaf (to garnish)

Method

Step 1 of 1

Purée 140g drained sun-blushed tomatoes with 1 garlic clove, 50g toasted pine nuts, 2 tbsp olive oil, 45g grated Parmesan, 1 seeded red chilli, and 1 tbsp lemon juice in a blender or food processor. Check the seasoning and add more lemon juice if necessary. Carefully mound 1 tsp of pesto onto each crostini and garnish with a basil leaf. For a variation, garnish with very thin slices of basil and replace the sun-blushed tomatoes with sun-dried.
