  • 20 small cherry tomatoes
  • 10 slices pancetta, sliced in half
  • 1 bunch basil
  • 2tablespoons olive oil
  • 1 clove garlic
  • 50grams roasted almonds
  • 1 squeeze lemon
  • 1 pinch salt
  • 1 pinch black pepper

Preheat oven to 180°C.Wrap 20 small cherry tomatoes in 10 slices of pancetta, sliced in half lengthways. Place on an oiled baking tray and bake for 20 minutes until the pancetta is cooked. Purée 1 bunch of basil with 2 tbsp olive oil, 1 garlic clove, 50g roasted almonds, a squeeze of lemon, and salt and black pepper in a blender or food processor. Check the seasoning. Pile the pesto on top of each crostini and top with a roasted cherry tomato.
