Description

Fresh and crisp apple and beetroot slaw works perfectly with rich smoked trout.

Method

Step 1 of 3

With a box grater or food processor, grate the carrots, apples and beetroot. Shred the cabbage and add all the vegetables to a large bowl.

Step 2 of 3

Pour over the vinegar, olive oil and mustard and mix well.

Step 3 of 3

Serve the slaw with flaked smoked trout.
