  • 1 cup coriander, leaves roughly chopped
  • 3 spring onions, finely chopped
  • 1 lemon, 2 tbs juiced
  • 2 water, boiling
  • 1/4 cup olive oil
  • 1 clove garlic, crushed
  • 1 1/2 cup couscous
  • 1/2 cup pistachios, roughly chopped
  • 1/2 cup raisins
  • 1/2 cup dried apricots, chopped

Method

Step 1 of 3

Place couscous in a large bowl. Pour over boiling water or stock. Cover and set aside for 10 minutes or until the water has been absorbed. Fluff up using a fork.

Step 2 of 3

Add chopped raisins, dried apricots, pistachios, spring onions and coriander leaves. Whisk olive oil, lemon juice, and garlic clove together.

Step 3 of 3

Drizzle dressing over couscous and toss well to combine.
