Smoky Falafel Wraps

- 1/2 cup plain flour
- butter lettuce leaves
- 1/2 bunch mint
- 1 small onion
- 1 cup parsley leaves
- 1/2teaspoons allspice
- 2teaspoons ground coriander
- 2teaspoons ground cumin
- 400grams can chickpeas, drained
- 2teaspoons lemon, rind grated
- 1 lemon, cut into wedges (to serve)
- 200grams hummus
- 5milliliter canola cooking spray
- 3teaspoons harissa spice seasoning
- 1 egg, lightly whisked
- 2 garlic cloves
- 4 wraps (or tortillas)
Method
Step 1 of 3
Combine flour and harissa. Process chickpeas, herbs, onion, garlic, lemon rind, spices and 2 tbs of the flour mixture together in a food processor until finely chopped. Transfer to a bowl and stir in enough egg to bind mixture. Chill for 15 minutes.
Step 2 of 3
Divide mixture into 8 portions and shape each into an oval. Toss in remaining flour mix to coat. Heat a flat barbecue plate over medium heat. Spray falafels well with oil and cook for 2-3 minutes each side or until golden. Transfer to a plate.
Step 3 of 3
Serve falafels with wraps, hummus, lettuce leaves and lemon wedges.
