  • 300grams mozzarella, drained
  • 20grams roasted red capsicum, sliced
  • 16 leaves basil
  • 1 pinch salt
  • 1 pinch pepper
  • 1tablespoons olive oil
  • 1tablespoons balsamic vinegar

Method

Step 1 of 3

Pre-heat the oven to 180°C. Place the drained artichokes on a baking tray and cover with the oil, balsamic, salt and pepper.

Step 2 of 3

Roast in the oven for 15 minutes. Slice your mozzarella and wash/drain your basil leaves.

Step 3 of 3

Remove the artichokes from the oven and serve layered with mozzarella, peppers and basil.
