  • 400grams chickpeas, canned, drained
  • 2 medium red onion, peeled, 1 chopped, 1 finely sliced
  • 2 cloves garlic, peeled and chopped
  • 1 bunch parsley, fresh, with stalks
  • 1/2 bunch coriander, fresh, with stalks
  • 1teaspoons cumin
  • 1teaspoons ground coriander
  • 1 medium lemon, juiced and zested
  • 2tablespoons plain flour
  • 2teaspoons olive oil
  • 2tablespoons tahini
  • 100grams Greek style yoghurt, reduced fat
  • 4 pitta bread
  • 150grams cherry tomatoes, sliced

Description

These falafel burgers are extra herby and zesty and are delicious on their own or stuffed in a pita.

Method

Step 1 of 3

Pre-heat the oven to 180°C/160°C fan-forced. Place the chickpeas, chopped red onion, garlic, parsley, coriander, spices, lemon zest and half the lemon juice in a food processor. Add the flour and pulse to form a smooth dough. Shape into 4 patties with your hands.

Step 2 of 3

Brush the burgers with oil and place on a baking tray. Bake for 20-25 minutes until golden, turning halfway through.

Step 3 of 3

Whisk the remaining lemon juice and tahini into the yoghurt and add a tablespoon of water to loosen. Toast the pita breads, spread with tahini yoghurt, add cherry tomatoes and sliced red onion and serve.
