- 4 large portobello mushroom, washed and drained
- 20grams butter, lightly softened
- 1 small white onion, peeled and finely diced
- 1 pinch salt
- 1 pinch cracked black pepper
- 2 cloves garlic, peeled and finely diced
- 4 slices chilli cheese
- 4 medium brioche buns, sliced in half
- 4tablespoons chipotle mayonnaise
- 4 leaves iceberg lettuce, washed, drained and torn
- 1 medium roma tomato, sliced
Description
This mushroom burger is spicy, cheesy and full of bite.
Method
Step 1 of 5
Pre-heat the oven to 180°C/160°C fan-forced. Combine the butter with the finely diced onions, garlic, salt and pepper.
Step 2 of 5
Place the butter inside the portabello mushrooms evenly and bake in the oven in a baking dish for 20 minutes.
Step 3 of 5
Remove from the oven and flip the mushrooms over and baste the other side of the mushroom with the juices.
Step 4 of 5
Bake for a further 10 minutes while you toast your brioche buns for 3 minutes.
Step 5 of 5
Place the lettuce, tomato and cheese on the buns and then add the roasted mushrooms before serving.
