  • 3tablespoons olive oil
  • 2 cloves garlic, finely sliced
  • 400grams chickpeas, drained and rinsed
  • 1/2 lemon, juice only
  • 1 lemon, zest only
  • 1 handful fresh flat-leaf parsley, chopped
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 1tablespoons extra virgin olive oil, to serve

Method

Step 1 of 2

Heat the oil in a frying pan, add the garlic and chickpeas, and cook for 2 minutes. Add the lemon juice, zest, and parsley, then cook over a medium heat for 2 more minutes.

Step 2 of 2

Remove from the heat and season well with salt and black pepper. Serve hot or cold, with a generous splash of extra virgin olive oil or chilli oil.
