  • 2 small fennel, trimmed and shaved
  • 2 yellow nectarines, halved, stone removed, thinly sliced
  • 20grams parmesan, shaved
  • 1/3 cup balsamic and olive oil dressing
  • 1/3 cup hazelnuts, roasted, roughly chopped

Method

Step 1 of 3

On a chopping board, trim the fennel and then shave the remaining with a peeler. Cut open the nectarines, remove the stone and cut into thin slices.

Roughly chop the hazelnuts and combine all ingredients with the shaved parmesan into a serving bowl.

Step 3 of 3

Drizzle over dressing to serve.
