- 400grams pearl couscous, rinsed
- 1 2/3 cup vegetable stock
- 2tablespoons canola oil
- 200grams halloumi, cut into small bite size portions
- 1 red onion, peeled and diced
- 200grams peas
- 4 cloves garlic, peeled and diced
- 100grams spinach, washed and drained
- 1 pinch salt
- 1 pinch cracked black pepper
- 80grams parmesan, grated

Description
The salty and squeaky halloumi contrasts well with the smooth pearl couscous.
Method
Step 1 of 5
Place the couscous and 400ml of the stock in a pot and bring to the boil, allow to simmer for 25 minutes.
Step 2 of 5
Heat up a pan to a medium heat the canola oil and fry the halloumi for 4 minutes while turning.
Step 3 of 5
Add the onion, peas and garlic to the pan and fry for a further 4 minutes and add the spinach for 1 minute.
Step 4 of 5
Once the pearl couscous is cooked, remove from the heat and allow to cool slightly.
Step 5 of 5
Combine the couscous with the rest of the ingredients before serving with parmesan as garnish.
