  • 1 bunch mint, leaves picked
  • 1 cloves garlic, peeled
  • 20grams pine nuts
  • 1 pinch cracked black pepper
  • 1/4 cup olive oil
  • 50grams parmesan, grated

Description

This pea and mint pesto is a taste of spring and is perfect with lamb.

Method

Step 1 of 2

Bring a large pot of water to the boil. Remove the peas from their pods and cook for 2 minutes. Drain well and rinse with cold water.

Step 2 of 2

Place peas and all ingredients into a food processor. Pulse until smooth. Pour into a sterilized jar, seal and store in the fridge for up to 1 month.
