- 150grams quinoa, ready cooked
- 1 medium red onion, peeled and diced
- 3 cloves garlic, peeled and minced
- 2 large portobello mushrooms, chopped
- 250grams butternut squash, peeled and diced
- 1 large beetroot, raw, peeled, grated
- 2 medium limes, zested
- 1 egg, beaten
- 4tablespoons plain flour
- 3tablespoons coriander, fresh, chopped

Description
These veggie burgers are packed with flavour and a couple of shortcuts make them quick and simple to put together.
Method
Step 1 of 3
Heat half of the oil in a large pan on medium high heat and cook the onions and mushrooms for 5 minutes. Stir in the garlic and cook for 2 minutes. Place the butternut squash in a large bowl with a dash of water, cover with clingfilm and microwave on high for 5-6 minutes.
Step 2 of 3
Tip the onion mix into the bowl with the butternut squash and mash well to combine. Add the grated beetroot, quinoa, lime zest, egg, flour and coriander and shape into patties with your hands. Chill in the fridge for 30 minutes.
Step 3 of 3
Heat the rest of the oil in a non-stick pan on medium low heat and cook the burgers for 6 minutes on each side until cooked through and golden. Serve with a wholemeal bun with mayo and salad, if desired.
