  • 1 onion, finely chopped
  • 4 cloves garlic, crushed
  • 800grams black beans, drained with liquid reserved
  • 1/2teaspoons dried oregano
  • 1teaspoons salt
  • 1teaspoons pepper
  • 50grams feta cheese, crumbled, to serve
  • 1 leaves coriander, chopped (to garnish)
  • 1/2 red chile, seeded, if desired, and chopped (to garnish)

Method

Step 1 of 4

Heat the lard or vegetable oil in a large skillet, add the onion and cook for 5-10 minutes, until golden. Add the garlic and cook for another 1 minute.

Step 2 of 4

Meanwhile, put the black beans and 2 tablespoons of the reserved bean liquid in a food processor or blender and blend until smooth.

Step 3 of 4

Add the pureed beans and oregano to the onion mixture, reduce the heat to low and cook for 5 minutes, stirring frequently. Add ½ cup of the reserved bean liquid and cook for another 5 minutes, until the beans are the consistency of very soft mashed potatoes.

Step 4 of 4

Season, sprinkle with the cheese, and serve garnished with the coriander and chile.
