  • 1tablespoons olive oil
  • 1 large onion, peeled and diced
  • 500grams turnips, peeled and diced
  • 250grams carrots, peeled and diced
  • 2tablespoons harissa paste
  • 1teaspoons cumin
  • 1teaspoons cinnamon
  • 2tablespoons preserved lemon, finely sliced
  • 2 cups vegetable stock, made with 1 stock cube
  • 400grams chickpeas, drained
  • 1/2 bunch coriander, fresh, chopped

Description

Turnip and carrots add heartiness and a little sweetness to this vegan tagine.

Method

Step 1 of 3

Pre-heat the oven to 180°C. Heat the oil in a large, ovenproof casserole dish and cook the onion for 5 minutes. Tip in the turnips, carrots, harissa, spices and preserved lemon and cook for 5 minutes.

Step 2 of 3

Tip in the stock and chickpeas and bring to the boil. Cover with the lid and place in the oven for 40 minutes.

Step 3 of 3

Stir in the chopped coriander and serve with couscous, if desired.
