- 4tablespoons tamarind paste
- 2teaspoons garlic and ginger paste
- 1teaspoons garam masala
- 2teaspoons chilli powder
- 1/4teaspoons asafoetida

- 3tablespoons coriander, fresh, chopped, divided
- 600grams potatoes, peeled, chopped
- 30grams breadcrumbs
- 1 medium green chilli, diced
- 2tablespoons canola oil

Description
Ragda pattice is a popular Indian potato patty dish topped with white pea curry, but green split peas work well in this and are easy to find.
Method
Step 1 of 4
Place the split peas in a large pan, add the turmeric and a pinch of asafoetida and cover with water. Bring to the boil, reduce to a simmer and cook for 25-30 minutes until very soft. Mash the split peas slightly.
Step 2 of 4
Heat a tablespoon of oil in a large pan on medium high heat and cook the ginger and garlic paste for 1-2 minutes. Add the chilli powder, garam masala and a pinch of asafoetida and cook for 1 minute. Stir in the tamarind paste and split peas, add 500ml of water and simmer for 8-10 minutes. Remove from the heat, stir in 2 tablespoons of fresh coriander and set aside to thicken.
Step 3 of 4
For the patties, place the potatoes in a large pan of boiling water and cook for 8-10 minutes, until softened and drain well. Tip into a bowl with the rest of the coriander, green chilli and breadcrumbs and mix well. Shape into patties with your hands.
Step 4 of 4
Heat the rest of the oil in a large pan on medium high heat and cook the patties for 2-3 minutes on each side, pressing down as they cook, until they are golden and crisp. To serve, divide the patties between 4 plates and pour the curry sauce on top.
