- 300grams potatoes, peeled, chopped into cubes
- 1/4teaspoons cumin
- 2teaspoons mango chutney
- 1tablespoons tamarind paste
- 1 pinch ground ginger
- 1tablespoons caster sugar
- 1 medium green chillies, diced
- 100grams Bombay Mix
- 1/2 bunch coriander, fresh, chopped
- 200grams tomatoes, diced
- 1 medium red onion, peeled and diced
- 60grams pomegranate seeds
Description
Bhel puri is a feast of textures and punchy flavours, a bowl of delicious Indian street food goodness.
Method
Step 1 of 3
Place the potatoes in a large pan of boiling water and cook for 10 minutes and drain well.
Step 2 of 3
Place the tamarind paste, caster sugar, ground ginger, cumin and a quarter of the green chilli in a blender with a tablespoon of water and blitz to a chutney consistency, adding more water if necessary.
Step 3 of 3
Toss the potato in a bowl with the red onion, tomatoes, coriander, chopped chilli and pomegranate seeds. Add the tamarind chutney and mango chutney and toss to coat. Stir in the Bombay mix and serve.
