  • 2tablespoons canola oil
  • 1 medium onion, peeled and sliced
  • 250grams potatoes, peeled and chopped
  • 1tablespoons curry powder
  • 5centimeters ginger, peeled and minced
  • 2 cloves garlic, peeled and minced
  • 300grams tomatoes, chopped
  • 1 medium green chilli, sliced
  • 100grams spinach
  • 200grams silverbeet, chopped

Description

Silverbeat makes this saag aloo extra green and delicious.

Method

Step 1 of 3

Bring a pot of water to the boil and cook the potatoes for 10 minutes, until tender, and drain well. Heat the oil in a large pan on medium heat and cook the onion and potatoes for 6-8 minutes until lightly golden.

Step 2 of 3

Add the curry powder, garlic, ginger and chilli and cook for 2 minutes, stirring. Tip in the chopped tomatoes and 3 tablespoons of water and cook on medium low heat for 15 minutes.

Step 3 of 3

Stir in the spinach and silverbeet and cook for 8-10 minutes until wilted.
