Description
Ragda pattice is a popular Indian street food dish of spiced potato patties with delicious and hearty curry sauce. Quick soaked chickpeas work perfectly in this recipe.
Method
Step 1 of 4
Place the chickpeas in a large pan, cover with water and bring to the boil. Boil for 1 minute, remove from the heat and soak for 1 hour. Drain and place back in the pan. Add the turmeric and a pinch of asafoetida and cover with water. Bring to the boil, reduce to a simmer and cook for 45 minutes. Drain and set aside.
Step 2 of 4
Heat a tablespoon of oil in a large pan on medium high heat and cook the ginger and garlic paste for 1-2 minutes. Add the chilli powder, a teaspoon of garam masala and a pinch of asafoetida and cook for 1 minute. Stir in the tamarind paste and chickpeas, add 500ml of water and simmer for 8-10 minutes. Remove from the heat, stir in 2 tablespoons of fresh coriander and set aside to thicken.
Step 3 of 4
For the patties, place the potatoes in a large pan of boiling water and cook for 8-10 minutes, until softened and drain well. Tip into a bowl with the rest of the coriander, garam masala, green chilli and breadcrumbs and mix well. Shape into patties with your hands.
Step 4 of 4
Heat the rest of the oil in a large pan on medium high heat and cook the patties for 2-3 minutes on each side, pressing down as they cook, until they are golden and crisp. To serve, divide the patties between 4 plates and pour the curry sauce on top.
