  • 1 cup parmesan, finely grated
  • 1 pinch black pepper (to season)
  • 2tablespoons olive oil
  • 1 pinch pink salt ground (to taste)

Method

Step 1 of 4

Trim zucchini. Run a vegetable peeler down the length of zucchinis to form thin ribbons. Bring a large saucepan of water to the boil. Add zucchini. When water returns to the boil, remove pot from heat and drain.

Step 2 of 4

Return zucchini to pan with olive oil and add cup of finely grated parmesan.

Step 3 of 4

Season with salt and freshly ground black pepper and toss.

Step 4 of 4

Sprinkle with extra finely grated parmesan to serve.
