Description

If you like carrot and parsnip mash you'll love these sweet and crispy honey and mustard scented fritters.

Method

Step 1 of 2

Place the grated carrots and parsnips in a clean tea towel and squeeze out excess moisture over the sink. Stir in the mayonnaise, mustard, flour and honey and mix well. Season with pepper.

Step 2 of 2

Heat the oil in a large pan and drop spoonfuls of the batter into the pan, cooking for 2 minutes on each side until crisp and golden. Drain on kitchen paper and serve.
