For the marinade
- 1/4 cup olive oil
- 1 pinch salt
- 3tablespoons mint leaves, torn
- 2tablespoons lime, juiced
- 2tablespoons fresh ginger, peeled and finely grated
- 3 fresh hot red chiles, seeded and minced
- 1 clove garlic, minced
- 750grams large cooked prawn
- 12 Belgian endive leaves
- 1 bunch watercress
- 1 lime, cut into wedges
Method
Step 1 of 2
To make the marinade, whisk the oil, mint, lime juice, ginger, chiles, and garlic. Season with salt. Add the prawn and mix. Refrigerate for at least 15 minutes and up to 1 hour.
Step 2 of 2
To serve, divide the endive among 4 salad plates. Top with the prawn and garnish with the watercress and lime wedges. Serve immediately.
