For the marinade
  • 1/4 cup olive oil
  • 1 pinch salt
  • 3tablespoons mint leaves, torn
  • 2tablespoons lime, juiced
  • 2tablespoons fresh ginger, peeled and finely grated
  • 3 fresh hot red chiles, seeded and minced
  • 1 clove garlic, minced
  • 750grams large cooked prawn
  • 12 Belgian endive leaves
  • 1 bunch watercress
  • 1 lime, cut into wedges

Method

Step 1 of 2

To make the marinade, whisk the oil, mint, lime juice, ginger, chiles, and garlic. Season with salt. Add the prawn and mix. Refrigerate for at least 15 minutes and up to 1 hour.

Step 2 of 2

To serve, divide the endive among 4 salad plates. Top with the prawn and garnish with the watercress and lime wedges. Serve immediately.
